Grand Cayman:
We signed up for a "swimming with stingrays" excursion (I know...scary, right? Has Steve Irwin taught us nothing?) But don't worry, it was cancelled because of the weather. We took tender boats in to our port and gave our money to local merchants instead - mostly Jimmy Buffett and a little place called "Margaritaville".
